I really felt like I was cooking lobster. It was a weird feeling. But it was sooo delicious. Carmelized onion and garlic, red bell pepper, Chicken of the Woods mushroom, Spike, Bragg’s, lemon juice. Served on rice.

Yesterday after lunch, Evan and I saw this massive mushroom on a tree.
The next day I showed the picture to Alex who said “that’s Chicken of the Woods”. Which sounded right to me from the bit of mushroom research I did a few years ago. I ran it by my mushroom-hunting-nerd friend, Aaron Patterson. He gave me the “sure looks like it to me” seal of approval. So Alex and I went back and harvested it.
Now we just have to decide what to make with it.
